I love this bag!
I don’t know about you, but I have this fascination with seeing what’s inside people’s bags, homes, ipods, and closets. I guess I’m just nosey.
I recently found this flickr group. The “what’s inside my bag” pool! If you’re like me, you’ll be there a while. THERE ARE OVER 8,000 PAGES OF PICTURES!!!!! Have fun.

Look what I made my baby:

I crocheted this little headband in about an hour and can write up the pattern if anyone’s interested. Well, I’ll try. Crochet patterns are not my forte.

Coming back from a 3-day weekend is so bittersweet. I’m relieved that it means a short work week this week though. Yay.
Anyway.
DH and I celebrated our anniversary Saturday night with dinner and a movie.

We watched this.

IT WAS AWESOME!
Now, I am not a “trekkie”, but I did watch this show regularly growing up. I loved it back then and this movie rekindled that old feeling of fascination and awe I had as a kid. I won’t bore you with a review or ruin anything with spoilers, but I will tell you that I highly recommend a viewing of this movie. Here are some more pics I found:

Sunday afternoon we went to a birthday party for this guy:

This is Aiden. His mama, Shannon and I met and hung out when our sons Michael and Bubba were playing football together (3 years ago). Aiden and Nacho were toddlers and I was in my first trimester with Lai. Time sure does fly.


The kids had so much fun.
Yesterday, Memorial Day, we had a bbq at Mom’s.

Today we celebrate our 15th wedding anniversary.
It hasn’t always been easy, but so worth it. I love sharing my life with you. You have been my best friend and my soulmate. I look forward to growing old with you.

Hi.
This past weekend was yet another fun-filled one.
Friday DH and Nacho came to have lunch with me.


Hanging out with these two always reminds me of the “old” days when it was just us three, DH, Ty and me. It seems so long ago…
I cherish my Friday lunches with my sweetie. What’s even more sweet is the fact that he goes home first (after work) to shower and get dolled up before picking me up. He says he wants to look (and smell) good for me when we go out together. awww.
Saturday Bubba’s team got to play indoors at this beautiful facility in Franklin.


They played 2 games back to back. They won the first game and lost the second. Joleen, Sulu, Folole, Rick and the oh-so-adorable Eliah made it to the second game. It was so nice to chat a little with them.
After the games, DH, Ty, Bubb and I (Lai stayed home with Mom) went to the Galleria to have dinner with the coach.
Saturday night, Lloyda and Britney came over to hang out. We played a game of Mexican dominoes. DH won. L and B ended up falling asleep during our viewing of “The Changeling” around 2 am. I was the only one awake as the credits rolled. Amateurs!
Sunday:
-got up at 10 to make breakfast and get ready for our trip to Knoxville.
-Left the house for Knoxville at 12:45.
-Made it to Knoxville at 4:30 (they are Eastern Standard Time).
-I didn’t take any pictures there. Shame on me.
-Talked to Dawn for a little while and did some catching-up. She’s sad that her baby is a man (he is sporting a FULL BEARD!)
-We stayed for a couple of hours, then headed home in time for Bubba’s 8:30 bedtime.
-Went to bed early. I was exhausted.
Yesterday, Monday, I meant to get some house-cleaning/Laundry done, but decided to accompany DH to the dealership to get the car fixed (it had a couple of recalls on it).
I watched Miracle at St. Anna (B) yesterday afternoon while trying to finish a new pair of socks I casted on last Friday. It’s almost done as I type this….

Today, I had some healthy-smealthy stuff for lunch:

Trying to get healthier so I can endure these hectic weekends. Cuz that’s what I need: More energy, more zest, and more smaller clothes.

It’s been hectic here. I took the day off today and it seems that time has gotten away from me. I have but a few moments left of this beautiful Monday afternoon. I will be outside with the kids enjoying the rest of this sunny day (the first one in over a week).

I haven’t decided if I really like these or not. The colors are BUGLY together. It sorta reminds me of the 70’s. It’s only the first sock. The second one has not been cast on. I don’t know if they will…
Have I ever told you that I love lists. Making lists, specifically. So much so that I found this website (listography.com) for people like me. It’s insane, you signup for an account and make lists. There are ideas for lists, and you can browse thousands of other people’s lists. I spent a R.I.D.I.C.U.L.O.U.S. amount of time doing just that. It’s so dorky.
Personally, I like writing my lists on paper. I used to practice my penmanship making lists in high school and I pride myself in the fact that I have perfected many MANY styles of handwriting. My penmanship is beautiful. (What? I can toot my own horn, it’s my blog, isn’t it?)
So, anyways, here’s my new book:

I even got my 15 yo son to do one. It’s an interview-type list. My kid is a comedian.
Also, last night, I played with Lai’s hair. It’s long enough and thick enough to braid now.



Cool, huh? It didn’t stay that way for long. She still needs a couple more inches in length for it to stay in braids. Soon, I’ll be braiding all kinds of fancy on this girl’s head. Poor baby. She’s in for some torture, and she doesn’t even know it. heeee. BUT she will be the coolest kid around with braid-ART on her head.
This Sunday we are driving down to Cookeville for a graduation (Little Chet). Tomorrow Bubba has 2 games (makeups for the last two weeks games cancelled because of the rain). The games will be in Franklin, indoors.
Tonight is movie-night.

Are you surrounded by clutter? Do you have too many things and nowhere to put them? I know I do. It’s a daily struggle for me to keep my clutter to a manageable pile. But most of the time, I fail at this. Yesterday, during my daily blog-surf, I came upon this website. It has tips on how to de-clutter your life, workspace, home, everything. What I found most interesting is the work-station “unclutterer”. There’s a flickr group here with tons of pics of people’s workstations/offices. Now, I am not a minimalist, by far, but I find that these bare desks/offices seem very efficient. There are no papers or books, but looks as though one can work very well in this type of setting. Today, I took some time to clear out some of the piles on my desk and here’s what it looks like now:

Yes, I know, there’s still some clutter compared to the photos on flickr, but to me, it’s ok. It’s still neat and tidy. To me.

Now, to the house. I’m kinda leary about that task. The junk drawers (yes, plural) alone scare me. There’s probably going to be fits of insane stress and despair and maybe some cursing, but it needs to be done. Like, seriously. I’ve reached “the point”. You know what I mean. Time to purge.
It’s Spring and that means Spring cleaning. And garage sales. I want to have a garage sale this season to get rid of all the junk cluttering our home and make some cash. Maybe I can finally buy that elliptical machine I’ve been wanting.

Lette’s Easy Enchilladas
Ingredients
6 boneless chicken breasts (I used the frozen grilled chicken breasts, they’re already cooked!)
1 pack tortillas (at least 8 tortillas)
1 large can enchillada sauce (the green kind)
1 bag shredded cheese (your choice)
1 jar of salsa
Baking Pan (glass 9′ x 13″)
Cooking spray
*Optional: Sour cream
Spray pan lightly with cooking spray.
Defrost chicken in the microwave and chop into small cubes.

Layer chicken, salsa, and cheese in a tortilla and roll.

Place in pan like so:

Continue filling, rolling, and placing until your pan is filled. Pour enchillada sauce over entire dish, making sure that all areas are covered, emptying can. Sprinkle with more cheese.


This is the kind of enchillada sauce I like to use.
Bake in the oven at 325 for 20 minutes (or until the cheese melts).
Voila!

Cut in half lengthwise and serve.

Serve with a dallop of sour cream. Enjoy!

I love knitting this. Unlike the last pair. Those are still languishing in the UFO pile. It’s actually one completed sock and not even close to a pair. The difference is that these have no purls in them. They’re called “No Purl Monkeys”, of course. They were initially for a friend, but I think they may need to stay with me. Since they love me so much.
After work yesterday, I decided to tackle the mess that is our “garden” out front.

After two hours with a hedge trimmer and some muscle. This is how they look now:

Don’t you just love seeing the fruits of your labor?
My three wee ones helped me. Especially this guy:

It was super tiring, but OH-SO-SATISFYING. I think I may have went a little snip happy with the hedge-trimmer though. hehe
I haven’t been reading my book. Instead, we’ve been spending time watching movies and catching up on the shows we missed on DVR.

I’m not as eloquent as my brother. Try as I may, I cannot bring words together as easily and as beautifully as Gordon. Sometimes he makes me cry. In a good way.

I hope everyone had a wonderful Mother’s Day yesterday. I did.
I awoke to breakfast with the family. DH got up extra early to get an omelette, pancakes, and toast from IHOP, and breakfast meals for the rest of the family. It was so sweet of him. For lunch, DH, the kids, Gordo, Mom, Jim and I ate at one of our favorite restaurants (Red Robin!).
